Oh man does this ever get my mouth watering! I am obsessed with Unagi. Ive never had a chance to eat it straight from live, to the grill then served. I can only imagine how good it is because I love the frozen unagi sold here locally. If I can love the frozen and reheated eel, the fresh like this has to be unbelievable!I also love the sauce on everything from rice to fish, chicken, veggies, etc. I would dunk my head into that vat of sauce just for a taste! lol. Yes i love it that much!

Grilling seafood is a very challenging task because they shrink and burn easily, but this chef did it to perfection! i cooked eels before and I used ash to remove the slim from the skin, then cut the eels into 1/2 medallions and season them with salt, pepper, and soy sauce. Then stir fried them and add oyster sauce, garlic, green onions, and crushed peanuts.

What an amazing skill !

I truly believe eel is an underrated meat, unagi might be the best there is.

I want this. I want ALL of this. Every one of the ways the Eel was prepared looked absolutely delicious. I fricken love Eel and all of that looked good.

Nothing like several spoonfuls of MSG for the sauce! They love that stuff in asian countries. Me personally cannot eat it. Gives me extreme stomach upset and on occasion if large amounts a migraine headache on top of the stomach issues. I see no use for it if you know how to build flavor. Its simply a cheat to coax out more flavor in less desirable pieces of meat and or vegetables. It is also a preservative and was again used to mask and retain usability in old, gamey proteins, starches and vegetables back in the old days. However like many traditions, it was never eliminated even when ingredients became fresh and of high quality. That almost instant “fullness” you get eating asian foods, especially Americanized “chinese” food is due to the MSG. Thats why when you eat you get full very quickly but then are hungry two hours later. It creates alot of gas in your stomach creating a bloated “full” feelings.

Man, I know I came for the fish prep, but I’ve come to find that I can watch people chop veg and grind spices and herbs all day long. My brain can only create the smells that it knows but it’s just so satisfying. I can almost feel how tender that bad boy came out, too. That camera can focus in on the molecular level.
