In Japan, the fish that can be caught depends on the region and season. I’m a Japanese living in Kanagawa, but I’ve never had sashimi with a tail head of humphead parrotfish. It looks so blue that I’m confused.

We v river eels and v have caught some that weigh over 8kilo. The toughest part is dealing with their slimy skin. But once the skin s off and it’s no easy task, it tastes so good.
The way you managed to make eel actually look good is incredible, especially considering how grossed out I was when you first started.
