Hi, just found this lovely recipe of yours. Can I use the stand mixer to knead the dough?

I made the steam bun yesterday, turned out but somehow the dough didn’t feel soft enough. I used the stand mixer, I may have either mixed too long or not long enough, took out and knead by hand for another few minutes, felt quite firm. Anyway it’s ok but I think not as fluffy. Also why they turned out not as white as yours I used all purpose flour.
